Butternut and sweet potato soup With oven baked chickepeas

I get a veg box delivered every 2 weeks and always welcome a butternut. I would have to it is one of my favourite vegetables I will show you my veg bos toward the end...So, please there's going to be a lot of photos.



Bake in a hot oven. I baked the butternut and sweet potato in a little olive oil and chilli flakes to give the soup a kick. The chick peas were olive oil garlic powder salt and pepper.



After about 30 minutes the chickpeas will look like this. You might like them left in longer for the crunch or less for it softer.


When the butternut is soft take it the oven waiting for ir to cool and scoop the insides out you could keep the skins with other peelings till you have enough to make a stock...Just freeze till you are ready to use,


Bring it all to the pan, add a stock cube if you like or if you have veg peeling save already use the stock from that. Bring to a boil simmer and blend it all till smooth. I will add should you wish to make a stock from old peelings discard those once used.


Heat when ready add chickpeas for extra "bite" I added salt and plenty pepper I like  kick in my soup.
Store the rest i tubs for the fridge or freezer.

Since I last logged in I have had to take my kitty to the vets and as she is a good weight and even if she wasn't carrying a cat in a carrier is actually hard work so i took the bus for. She is fine though it was conjunctivitis. It cost me halve the fee just to walk in the room...
