Chicken pot pie and Banana oat muffins


Banana and Oat muffins
I had 3 bananas that needed using up so made these, recipe is really easy

Chicken pot pie

I used the left over chicken from yesterday's Sunday roast to make these.
I stripped all the meat off the bones (I also boiled the bones for stock which I will be using this week in the chicken rice and beans.

Pastry shell
As I make it off by heart and I actually don't have a recipe, try following this one

What you will need for the filling
Please just use this as a guide as I also make this off by heart too

3tbsp of plain flour.
2 Tbsp butter
Few leeks I had a large one and two tiny ones.
Left over chicken.
Frozen or canned veg or ready cooked veg I usually use sweetcorn and peas, today it was just peas.
Milk/water (or whichever that might fit your diet)
Chicken stock cube
Salt & Pepper.

melt the butter in a pan
Add the leeks and fry for a few minute
Once the leeks have softened slightly add flour
Fry the flour off for a few minutes add the salt pepper and stock cube.
Ass the milk little by little till you have a sauce that it not too thick but not too thin.
Add chicken and veg and mix well.

Line a pie tin with the pastry (if you have enough make two pies)
Fill the pie and cover with the pastry lid.
Cut a couple of slits to the top of the pie and back in the oven for around 200 for around 30-40 minutes
